Pineapple Banana Bread

This was part of our Charity Banana Moon Banana Bake Off in support of Martin House Children’s Hospice. Here was my entry:

Makes one loaf

1/2 cup butter, softened
1 cup sugar
2 eggs
1 ripe banana – mashed
1/3 cup drained pineapple pieces
1/2 cup flaked coconut – chopped slightly
2 cups plain flour
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt



1. In a bowl, cream together the butter and sugar. Beat in eggs. Stir in the mashed banana, pineapple pieces and flaked coconut. Combine the remaining dry ingredients & stir into the creamed mixture just until combined – do not overmix. Spoon into a well-greased 8″ x 4″ loaf tin.

2. Bake at 180c for 65-70 minutes or until bread test done.

3. Cool in the tin for 10 minutes before turning out onto a wire rack.
