Chocolate and Banana Cookie Bites with Peanut Butter Fudge topping

I had a great time making these for the bake off. However it’s fair to say my husband enjoyed it even more. Have a look at the gallery to see him caught red handed eating the mixture


  • 250g Plain Flour
  • 250g Unsalted Butter
  • 200g Brown Sugar
  • 65g white Sugar
  • 2 Eggs
  • Pinch of Salt
  • 2 tsp Vanilla Essence
  • 1 Large Banana
  • 300g Baking Chocolate
  • 100g Chocolate Chips
  • 300g Chocolate Fudge Topping
  • 200g Smooth Peanut Butter
  • Crushed Peanuts (for decoration)





  1. Pre-heat the oven to 180°
  2. Soften the butter and mix together with the beaten eggs, brown sugar, white sugar, salt and vanilla
  3. Sift in the flour and mashed up banana
  4. Break the chocolate up into chunks (approximately 1cm) and add to the mixture
  5. Spray a large flat dish with cooking spray
  6. Add mixture to the dish, smoothing out the top
  7. Add the chocolate chips to the top
  8. Bake for approximately 30-40 minutes, until golden brown.
  9. Allow to cool before cutting into bite size pieces and adding topping

For the Topping

  1. Heat up the chocolate fudge in a microwave for approximately 30 seconds (until soft but not hot)
  2. Mix together the chocolate fudge and peanut butter.
  3. Ensuring the topping is not warm, pipe in swirls on the top of the cookies.
  4. Add crushed peanuts for decoration
